Sichuan pepper, also known as Szechuan pepper, is a spice commonly used in Sichuan cuisine in China, in Nepal, and in northeast India. Despite its name, it is not closely related to black or chili peppers.
Instead, they are dried berries from mountain ash trees found in the Szechuan province of China. Szechuan pepper is aromatic and has a vibrant citrus-like flavour.
It has officially played a role in more than 30 traditional prescriptions in China for treating toothache, abdominal pain, vomiting, trauma, and other ailments.
Uses of Szechuan pepper in cooking?
Blend it with coarse salt and ground black pepper, then use it as a rub for beef. Blend it with just salt and sprinkle it over fried chicken. Or blend it into panko to use as the breading for oven “fried” chicken tenders.
