  • How to Prepare Pajarito Yerba Mate

    Pajarito is a traditional, strong Paraguayan yerba mate. It is versatile and can be enjoyed hot (Mate) or cold (Tereré).

    1. Traditional Method (Hot Mate)

     

    Step Instruction Tip
    1. Fill the Gourd Fill a cured gourd (or mug) about 1/2 to 3/4 full with Pajarito yerba mate. Less mate for a milder taste, more for a stronger infusion.
    2. Shake the Dust Cover the top of the gourd with your palm, turn it upside down, and shake a few times. This moves the finer dust particles to the top/bottom, which helps prevent the bombilla (straw) from clogging. Tilt the gourd back to a 45° angle to create a slope of mate on one side.
    3. Moisten the Base Pour a small amount of cool or lukewarm water into the hollow space on the low side of the slope. Wait about 30 seconds for the leaves to absorb the water. This protects the leaves from the heat and helps the flavor last longer.
    4. Insert the Bombilla Plug the tip of the bombilla with your thumb, insert it into the moistened area, and push it to the bottom of the gourd. Do not move the bombilla again! Moving the straw will disrupt the filter and cause clogging.
    5. Start the Brew Pour hot water (see temperature below) into the hollow space near the bombilla, filling the gourd halfway up the mate line. Drink immediately through the bombilla without stirring.
    6. Re-infuse Once you finish the infusion, refill the gourd with hot water and pass it on (if sharing), or continue drinking. A single portion can be re-infused multiple times until the flavor washes out. The first half of the leaves should be kept dry, so only wet a small section with each pour.b
